Eleven Point Five Degree is an Italian style pilsner, brewed with our lager love mates urban roots brewing, out of Sacramento California. We approached this beer in a similar fashion to the 10 degree beer made by urban roots, but upped the original gravity a bit and finished the beer with a delicate dry hop of Hallertau Mittelfruh & hersbruker. 11.5º has a light malt character from the extra pale premium pilsner malt base, so it finishes very cleanly with just a touch of sweet malt character and noble hop aromatics. A lovely beer, brewed to be consumed in quantity among friends. A true essence of collaborative brewing!

Absent Origin

Hazy IPA • 6.5%

Absent Origins liquid velvet mouthfeel is created by heavy doses of flaked wheat/malted oats + the use of a yeast strain of English origins. The holy trinity of Citra, Mosaic, and Simcoe hops were used in the whirlpool to lay base flavors and aromas of apple blossom, orange rind, and juicy fruit. Post fermentation Absent Origin was dry hopped at space age levels with even more Citra, Simcoe, and Mosaic. Aromas in your glass consist of honeymelon, wildflowers, and fresh morning dew.

Among The Willows

West Coast IPA • 7%

Among The Willows is our flora/human hybrid West Coast IPA. Bright but with a touch of lupulin haze, aromatic, soft bitterness, and JUST a touch of malt - the way a WC IPA should be. Hopped heavily, like a tree humanoid should be, with Citra, Strata, and Motueka. These hops together create complex aromas and flavors of dank noble fir, lemon beebrush, sage, and orange marmalade. A throwback, of sorts, to the tree human hybrids of the past…

Analog Device is a super fluffy hazy double IPA built with enough oats we almost put quaker out of business. The oats, paired with wheat, give this beer a really soft mouthfeel, good body, and great foam. We hopped this beer hot side with way too many pounds of Galaxy & Strata. This laid the base for a mega dry hop of Nelson, Citra, Mosaic, and more Strata + Galaxy. This hop cocktail lends itself to strong aromatics and flavors of passion fruit, red grapefruit zest, gooseberries, a hint of lime leaf. What does your analog device tell you?

Strong Dark Ale • 12.1%

Feathers, Bone Chimes & Eternal Rest is a collaborative strong dark ale, brewed in collaboration with our strong beer sensei - HORUS Aged Ales. For this beer, Kyle took us under his wings to guide us through his thoughts and process on the production of strong, viscous, and fulfilling beers. The base of F.B.C.E.R. was brewed with copious amounts of specialty malts including maris otter, crystal, oat & wheat malts. This combination of malts yielded a heavy wort that was then boiled for 5 hours to achieve full viscosity and increased in gravity with the addition of turbinado sugar. Post fermentation, the resultant beer is rich and pallet coating.

We then split the beer into 3 separate expressions; one portion being packaged “straight”, with no adjuncts and a slightly lower carbonation. The second conditioned HEAVILY on Vanilla to add aromatics and texture. The 3rd on over 800 pounds of coconut which transformed the beer with huge coconut flavor and even more silky mouthfeel.

All 3 variants are decadent, strong, lush and lend a nuanced drinking experience that pairs best with slow evenings, good friends, and eternal rest.

The dungeon floor is built with Pilsner malt for a very pale color and the tiniest hint of malt sweetness. The chains and shackles are put in hot side as Mosaic, CTZ, and Citra. Then, post torture (fermentation), we treated this beer with a MEGA dry hop of Comet, Citra, Galaxy and Mosaic. The resultant beer is zippy, fruity, and tropical with the perfect level of underlying dankness and pain.

SPORE is a hazy india pale ale constructed of base malts plus copious amounts of wheat and oats to create cumulonimbus like mouthfeel and body. Hopped heavily across the board (including 2 dry hops - DDH, bro…) with Mosaic, Riwaka, Chinook, Nelson, and a sprinkling of Sabro - SPOREs hops are explosive on the pallet and in the aroma. Mosaic, Nelson, Riwaka and Chinook lay down fruity pebbles, nectarine, and guava aromatics layered in with some Coconut from the Sabro. The final product feels like drinking a tropical drink on an island BUT you’re probably just chillin’ on your couch man…

STAG is our 100% Mosaic pale ale, built simply, with Pilsner malt, Mosaic hops, and zero funny business, pal. The Pilsner malt keeps the body light and lends just a touch of malt character to act as a backbone to the bags of Mosaic hops we threw in. Hopped hot side with Mosaic & then double dry hopped (DDH BRO!) with even more Mosaic the resultant pale ale is explosive with DANK aromas of feijoa, passion blossoms, blueberry, and hippie lettuce.

Star God was constructed with 2 different varieties of wheat + oats to create its supportive, loving, and caring mouthfeel. Once we dialed in the velvet we had no choice but to bomb this beer in the whirlpool with Citra and Cashmere. Post fermentation we dumped bags on bags of more Citra, Azzaca, Nelson, and a touch of Simcoe for good measure. This builds aromas and flavors of peach rings, apricot, and a some mandarin. Bow down to the Star God…

Stellar Fawn is an intergalactic space elk style IPA brewed with a mix of 2 Row and Pilsner malts + a touch of wheat. This grist keeps the body light and lets the focus fall to the hop profile. Hot side hopping with Simcoe and Cashmere lay down fruity base for the Citra, Strata, Chinook dry hop. All these hops come together to form notes of sweet dragon fruit, peach blossom, and fruity Flinstones vitamins. Note: This beer is tasting fucking awesome right now.

Temporal Illusion is a collaborative Saison made with our friends, and mentors, Firestone Walker. It started with a Rye base Saison, brewed at TDNE, then incorporated some hand selected barrels from Firestone Walker Barrelworks in Buellton. The blend culminated with 88% Rye Saison, 10% Sauvignon Blanc Wild Ale, and 2% mixed fermentation IPA. The resultant beer is bone dry, has nuanced acidity, high carbonation, and great balance. Tasting notes of apple blossoms, Sauvignon Blanc petrol, fresh cracked pepper, and mineral water.

THE COLOR OF THE AIR

Summer Ale • 4.9%

Hold on to summer, friend! The Color Of The Air is a zippy, fruity, summer wheat beer - designed around warm weather, summertime imbibing. Brewed outside of any style guidelines, The Color Of The Air is fermented with hefeweizen yeast but hopped with fruity American hop varieties (Citra & Amarillo), its got just the right amount of bitterness to keep drinkability HIGHER than hades is HOT. It’s the perfect beer to beat the heat and transport yourself to the beach or mountains, even though you’re probably just chillin’ in the AC on your couch.

Transit Of The Binary Star was fermented in stainless steel with a rustic Saison yeast then, post primary fermentation, was re-fermented in the keg with a house strain of Brettanyomyces. The bottles were then laid to rest for 12 months (to the day dude!) to develop and carbonate. This secondary fermentation produces unique earthy/fruity aromas and ferments the beer to complete dryness. The resulting beer is complex and bone dry with notes of barn hay, tilled earth, mineral water, a touch of pear sweetness and some cherry aromatics. TOTBS is drinking great now but can hold up to being aged further, if desired.

Triple Psychic is an elevated and AMP’d up version of our beloved double IPA Psychic Advisor. All the familiar notes of Psychic Advisor, turned up to 11 dude… Fermented to nearly 10% abv and hoppy as hell, this beer was hopped hot side with Amarillo, Simcoe, Mosaic & Citra hops.  Once again we pried open our third eye and it told us to do a MEGA fucking dry hop. Of course, we drank the Kool-Aid and dumped in bags on bags of more Mosaic, Strata, Amarillo, & our old dank pal CTZ. The resulting beer has the same big notes of candied mandarins, lime leaf, pine resin, and clairvoyant thoughts as its little brother but adds in some sweet malt  & heat from the extra ABV. A beer so insane & clairvoyant - we only brew this once per year.

Two Moon Ritual is a hybrid West Coast IPA of sorts, with one foot in the new school and one foot in the old. Quick and zippy malt character to give the kids what they want these days, but followed by some dank and resinous hop character that reminds you of the base of the pyramid that West Coast style IPAs were built on. Hopped in the brewhouse with Magnum, Simcoe, Nelson, and Strata, then blasted post fermentation with more Nelson, CTZ, Simcoe & Mosaic. This combo leads to heavy resins, reefer madness, and a touch of that diesely NZ Sauvigon Blanc.

Uncommon Anatomy is a collaborative IPA, brewed with the Central Coast State Parks Association, to help raise awareness, and funds, for our Central Coast State Parks. This West Coast IPA was built with a simple grain bill of 2row barley and oats to keep the malt light and drinkability high. Hopping was done with a mix of Idaho 7, Mosaic, and Amarillo which creates a floral, citrus pith aroma and flavor. After first sips, you’ll pick up notes of candied mandarins, lime leaf, and ruby red grapefruit.

Vague Future is our take on the once forgotten Black India Pale Ale. This beer is built like a West Coast style IPA but with the addition of roasted and high dried malts to add color and malt complexity to the mix. The malts lay down notes of bittersweet chocolate, African coffee beans, and burnt sugar, however, these notes are quick to disappear from the palette as the beer is fermented dry. Amarillo, Simcoe, Citra, and Azzaca (hot side & double dry hop) lay down aromatics of citrus, tropical fruits, and blueberry. In a glass void of light the future is vague…

VIEW FROM TOMORROW

WEST COAST DIPA * 8.0%

View From Tomorrow is a zippy, crispy, birds eye view, Citra bomb of a West Coast DIPA. Built with a blend of Pilsner malt and 2-Row to keep the malt character light and top down focus on the hops. Hopped HEAVY in the kettle with our finest lot of Citra, then given the ole’ DDH with even more Citra for expansive views of citrus, a hint of pomelo, sprite, and lemon heads.
